Wake Up Casserole

Wake up with this great breakfast casserole!

Ingredients
  • 8 frozen hash brown patties
  • 4 cups shredded cheddar cheese
  • 1 lb. (2 cups) diced fully cooked ham
  • 1 green bell pepper, diced
  • 7 eggs
  • 1 cup milk
  • ½ tsp salt
  • ½ tsp ground mustard
  • 1/8 tsp pepper

Directions
  1. Grease a 9 X 12 pan and lay the 8 patties on the bottom.  
  2. Sprinkle ham, bell pepper, and cheese over the patties.  
  3. Beat eggs, milk, and spices together and pour over meat and potatoes.  
  4. Cover with foil and bake for 1 hour in a 350° F oven.  
  5. Uncover and bake an additional 15 minutes.  
  6. This may be made the night before and refrigerated or baked right away. 

*May substitute cooked ground sausage for the diced ham and use diced red bell pepper.
