Chicken Wild Rice Soup

  • 6 T butter
  • 1 T minced onion
  • ½ cup flour
  • 3 cups chicken broth
  • 2 cups cooked wild rice
  • 1/3 cup diced ham
  • ½ cup finely shredded carrots
  • 3 T chopped slivered almonds 
  • ½ tsp salt 
  •  2 tsp Sunny Paris seasoning
  • 1 cup half and half
  • 2 T dry sherry (optional)
  • parsley or chives.

Directions
  1. Melt butter and sauté minced onion.  
  2. Blend in flour, gradually stir in 3 C chicken broth. 
  3. Cook over medium, stirring constant until mixture comes to a boil.  
  4. Boil and stir 1 minute. 
  5. Stir in the wild rice, ham, carrots, almonds, salt, and seasoning.  
  6. Simmer 5 minutes.  
  7. Blend in 1 cup half and half and dry sherry (optional).  
  8. Heat to serving. 
  9. Garnish with parsley or chives.   Serve.
