Rhubarb Bread

Use some of your rhubarb supply to make this yummy bread.

Ingredients:

  • 1 ½ cups sugar
  • 2/3 cup oil
  • 1 egg
  • 1 c. buttermilk (milk with lemon juice)
  • ½ tsp salt
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 2 ½ cups flour
  • 2 cups rhubarb, cut into 1/2” chunks

Topping:

  • ¼ cup melted butter
  • 1/3 cup sugar
  • 1 T cinnamon

Directions
  1. Cream sugar and oil. 
  2. Add egg and buttermilk.  
  3. Stir in the rest of the ingredients, mixing rhubarb in last. 
  4. Grease 2 loaf pans. 
  5. Pour batter into loaf pans.  
  6. Bake at 350° for 1 hour. 
  7. Pull bread out and spoon the topping on the top of the loaves of bread. 
  8. Return to the oven and bake for another 15 to 30 minutes. 

You may want to cover the bread with foil during the last 15 to 30 minutes.
