Selection tips

Young rabbits or fryers should have tender, fine-grained and bright pearly pink colored flesh.  Roasters, or mature rabbits will have firm and  coarse grained flesh that is slightly darker in color and less tender.  The fat may be more creamy in color than that of a young rabbit.

Storage tips

Refrigerate at 40°F or below.  Use within 2 days or freeze at 0°F.
