Broccoli and Raisin Salad

This salad is a great choice if you want something besides a lettuce-based salad.

Ingredients

Ingredients: 

  • 2 heads broccoli, chopped (I do not use the stalk)
  • 1 cup raisins 
  • ½ pound fried bacon (cut raw bacon into pieces, then fry & drain)
  • ½ cup onions

Dressing:

  • 1 cup mayonnaise
  • 2 T sugar
  • 2 T vinegar

Topping:

  • 1 small package sunflower seeds

Directions
  1. In a large mixing bowl, combine the chopped broccoli, raisins, bacon, and onion.  
  2. In a small mixing bowl, combine the mayonnaise with the sugar and gradually mix in the vinegar.  
  3. Pour the dressing over the broccoli and top with sunflower seeds just before serving.  You can thin the dressing with a little milk if you like.  
  4. You may have to make a little more dressing, depending on how much broccoli you have cut up.

*Sunflower seeds tend to get soggy if salad is not eaten right away.
