Cheeseburger Soup

Ingredients
  • ½ lb. hamburger (or more)
  • 4 cups shredded frozen potatoes 
  • ¾ cup chopped carrots
  • ¾ cup diced celery
  • ¾ cup chopped onion 
  • 1 tsp basil
  • 1 tsp parsley flakes
  • ¾ tsp salt
  • ¼ to ½  tsp pepper
  • 8 oz Velveeta cheese
  • ¼ cup flour
  • 4 T butter (divided)
  • 3 cups chicken soup (or two full cans)
  • 1 ½ cups milk
  • ¼ cup sour cream

Directions
  1. In large saucepan brown hamburger, drain and set aside.
  2. In saucepan, sauté onion, carrots, celery, basil, and parsley in 1 T butter for about 10 minutes.
  3. Add broth, potatoes, and hamburger.  Bring to a boil.  Reduce heat, cover, and simmer 10 - 12 minutes.
  4. In a small skillet, melt remaining 3 T butter, add flour.  Cook 3 - 5 minutes until bubbly.  
  5. Add to soup. Bring to boil.  Cook and stir for 2 minutes.  Reduce heat to low.
  6. Add cheese, milk, salt, and pepper.  Cook and stir until cheese melts.
  7. Remove from heat and add sour cream.
