Ingredients
- 1 cup cooked rice
- 1 clove garlic, minced
- 1/4 cup sliced green onions
- 8 ounce bag snow pea pods or sugar snap pea pods, sliced diagonally in half
- 1 pound ground lean turkey breast
- 1 tablespoon minced fresh ginger root
- 1 tablespoon sesame oil
- 1 tablespoon Thai spicy chili sauce
- 1/4 cup sweet chili sauce
- 1/4 cup edamame
- 2 cups coleslaw mix
- 1 18 oz bag premium romaine salad blend
Directions
- Cook rice according to directions to equal 1 cup cooked.
- Chop garlic, green onions, and pea pods. Set aside.
- Brown ground turkey in a non-stick skillet.
- Add ginger root and garlic when ground turkey is browned. Sauté until garlic is cooked. Stir in Sesame Oil, Thai Spicy Chili Sauce and Sweet Chili Sauce.
- Add green onions, coleslaw mix, edamame pea pods and cook until tender.
- Add cooked rice and stir until warmed.
- Put a handful of lettuce leaves in a bowl. (about 2 cups)
- Spoon 1 cup hot turkey mixture over lettuce leaves.
