Ceviche(ish)

This is a great way to use up some leftover cooked shrimp. You can also cook shrimp just for this dish!

Ingredients
  • 1 cucumber, seeded and diced
  • 1-2 large tomatoes, diced
  • ½ cup red onion, finely diced
  • 1 jalapeno, finely diced
  • 1 avocado, diced
  • ½ bunch cilantro, chopped
  • Juice of 1 lemon (about 2 tablespoons)
  • Juice of 1 lime (about 2 tablespoons)
  • Leftover cooked shrimp
  • Salt to taste
  • Tortilla chips for serving

Directions
  1. Mix everything except the tortilla chips together.
  2. Adjust salt as you want.
  3. Chop cold shrimp and mix in.
  4. Serve with tortilla chips.
