Low Country Shrimp Boil

Ingredients

  • 8-10 quarts of water
  • 1-2 whole red or yellow onions, quartered
  • 1 green bell pepper for color
  • 1 head of garlic, cut in half
  • Old Bay Seasoning 

For 4-6 people

  • 3 lb. red potatoes, new + small
  • 1-2 lb. whole carrots
  • 1-2 lb. kielbasa sausage
  • 1-2 lb. andouille sausage
  • 608 ears sweet corn shucked and broken into ½
  • 1 pint mushroom
  • 3-4 lbs peel-on shrimp

Scale up ingredients for each additional guest.

  • 2-3 potatoes
  • 1-2 whole carrots
  • ½ lb. sausage
  • 1-2 ears sweet corn shucked and broken into ½
  • Mushrooms to taste (or 1 pint for every six people)
  • ½ lb. shrimp
Directions
  1. In large pot, add water, onion, pepper, garlic and Old Bay Seasoning. Add enough seasoning to the water to make it look like iced tea.
  2. Bring to a rolling boil.
  3. Add in potatoes and cook 5 minutes.
  4. Add in carrots and cook 5 minutes.
  5. Add sausage and cook 5 minutes.
  6. Add corn and mushrooms cook 2-3 minutes.
  7. Add shrimp and cook 3-5 minutes until opaque/pink.
  8. Drain immediately.
  9. Dump onto surface covered with butcher paper or onto large platter.
  10. Serve with butter or salt if preferred.
