Chicken Bacon Pesto Sandwich

This delicious sandwich is a great way to use bits from a roasted chicken or enjoy some fresh basil.

Ingredients

For Pesto:

  • ¼ cup pine nuts
  • 2 cloves garlic
  • 2 cups fresh basil leaves, packed
  • ½ cup parmesan
  • ½ cup olive oil
  • 2 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp pepper

For Sandwich:

  • Ciabatta (or another good bread or roll)
  • Pesto (fresh or store bought)
  • Chicken
  • Tomatoes
  • Fresh mozzarella
  • Bacon

Directions

For pesto:

  1. Toast the pine nuts if you want. It adds a depth of flavor.
  2. Put the pine nuts and garlic cloves in a food processor and process for 5 seconds.
  3. Add the basil and lemon juice and process until the leaves are all chopped up and no whole leaves remain.
  4. Drizzle in the olive oil. Process until it comes into a smooth(ish) paste.
  5. Taste and add salt and pepper as needed. 

For sandwich: 

  1. Spread pesto on both sides of the inside of the roll, layer the chicken, fresh mozzarella, sliced tomatoes, bacon, and top with the top of the roll.
