A delicious and filling pasta that is a great way to use up some roasted chicken!

Ingredients
- 8 oz penne
- 1 tbsp olive oil
- Diced chicken
- 1 bell pepper, sliced
- ½ onion sliced
- 1 tsp garlic, minced (about 1 large clove)
- 1 can fire roasted tomatoes
- 1 tbsp Taco seasoning
- Mexican cheese
Taco Seasoning
- 1 tsp chile powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp oregano
- ½ tsp salt
Directions
- Heat oven to 400
- Cook penne according to directions on the box.
- In a skillet heat the oil and add the peppers and onions. Cook 4-5 minutes until starting to soften.
- Add garlic and cook for 30 seconds.
- Add chicken and taco seasoning and cook 4-5 minutes.
- Add in can of tomatoes, including the juice.
- Stir the pasta into the sauce.
- Pour the mixture into a greased 8x8 and top with cheese.
- Bake 15-20 minutes or until the cheese is melted.
Taco Seasoning Directions
- Mix together. Store in an airtight container or baggie.
