Ingredients
- Carcass of chicken
- Celery
- Carrots
- Onion
- Parsley
- Peppercorns
Directions
- Place everything in a large pot. And cover with 2-3 inches of water.
- Bring to a simmer. After about 20 minutes skim some of the fat and stuff that has risen to the top.
- Continue to simmer. The longer it can cook the more concentrated the flavor.
- Do not boil. That will simmer up everything at the bottom and make the stock cloudy.
- Strain and use or freeze.
