Citrusy Cucumber Salad with Cilantro and Peanuts

A refreshing salad that is the perfect way one to use up some cucumbers and/or pickles! Great to make with the leftovers from Dill Pickle Lemonade.

Ingredients
  • 4 cups reserved cucumbers/pickle from making lemonade
  • 1 medium onion, thinly sliced
  • 2 cups cilantro leaves and stems, chopped
  • 1/2 cup crushed peanuts

Directions
  1. Reserve 2 tablespoons of crushed peanuts and a few sprigs of cilantro
  2. Combine the remaining ingredients and allow to marinate in the fridge for at least an hour
  3. Before serving, top the salad with the reserved peanuts and cilantro.
  4. Enjoy cold or room temperature
