Goat Cheese and Cucumber/Pickle Dip

This delicious dip is the perfect one to use up some cucumbers and/or pickles! Great to make with the leftovers from Dill Pickle Lemonade.

Ingredients
  • 2 cups cucumber/pickles
  • 10 ounces simple life farms chevre
  • 8 ounces cream cheese
  • 2 cloves garlic, minced coarsely
  • 2T Olive oil
  • 1 cup parsley, chopped
  • Salt to taste

Add all the ingredients to the bowl of a food processor and blend until desired consistency is reached.
