Ingredients
- 4 ears fresh sweet corn
- 12 grape tomatoes, halved
- ½ cup feta cheese
- ¼ cup red onion, minced
- ¼ cup flat leaf parsley, minced
- 3 T apple cider vinegar
- 3 T olive oil
- ½ tsp salt
- ½ tsp pepper

Directions
- Bring pot of water to a boil.
- Put corn in boiling water for 3 minutes.
- Remove and rinse with cold water.
- Cut corn off the cob.
- Add remaining ingredients and toss to combine.
- Refrigerate until ready to serve.
