Ingredients
  • 1 package turkey bacon, chopped
  • 1 can black beans, rinsed and drained
  • 1 poblano pepper, chopped
  • 3 cups kale or spinach, chopped
  • 32-ounce carton of egg whites
  • 1 cup milk
  • 8 slices of pepper jack cheese
  • 8 tortilla shells

Directions
  1. Heat oven to 375 degrees. Spray oil over 9x13 pan, set aside.
  2. Mix turkey bacon, black beans, poblano pepper, kale, egg whites and milk.
  3. Pour into prepared pan. Bake 15-20 minutes or until the center is set.
  4. Once cooled, cut into strips to fit the tortilla.
  5. Place sliced pepper jack cheese on tortilla, add egg mixture strip, then roll up.

*Can be made in advance and heated.
